Shortly after building their dessert sprinter van with Firefly, this dessert truck hit a building while leaving an event. Luckily, no one was injured, the truck was insured, and the damage wasn’t extensive. Our client brought the van back to us and we were able to repair the damage fast. After removing the crumpled portion of the roof extension, we fabricated and installed a new extension. The new bare metal was then re-wrapped to match the existing wrap and the client was back on the road making money.

LAYOUT EQUIPMENT CHANGE
FOOD TRUCK REPAIRs
We converted this used ice cream truck into a new gourmet hot dog truck business for our client. This makeover required a complete redesign of the layout and equipment inside the truck. After getting Health Department plan check approval, we removed everything except the walls and ceiling from the truck. Then we updated the electrical and added a new propane system to power the new 48” prep fridge, 36” griddle, hood, 3- compartment sink, hand sink, and A/C unit. All stainless storage cabinets, stainless countertops, splash guards and aluminum diamond plate flooring were custom fabricated and installed to pass the Health Department inspection.
Modifications to Pass Health Inspection
Two new food trucks built by a competitor and costing $500,000, didn’t pass Los Angeles Health Department inspection… the other builder refused to repair them without the customer driving them back to the builder in Texas! The customer brought their food trucks to Firefly and we overhauled them per the LA health inspector’s instruction including:
- Remaking the serving door area with tempered glass
- Correcting the pass through sizes for all serving door window cutouts
- Adding self closing screens for window cutouts
- Covering all exposed conduit with hat channel stainless profiles
- Redoing the exterior plumbing inlet to accept a door
- Adding a health department approved water inlet
- Adding an overflow to the waste water tank
- Adding a sanitizer bucket and secure tray
- Adding storage above the 3-compartment sink
- Adding an OSHA first aid kit with mount
- Labeling the emergency exit with 2″ contrasting letters
Both trucks passed inspection and received their permits after we made the required modifications. However, the initial cost of the trucks plus the cost of these necessary overhauls were so high, that this business may shut its doors before it even launches.
Los Angeles Health Department food truck inspections are some of the strictest in the entire U.S. Be wary when buying a used food truck or even a new, custom food truck. Unfortunately, not all food truck manufacturers have the knowledge, skillset or attention to detail to ensure your food truck will pass health inspection on the first try.
